Mashing and lautering are done in one vessel, the mash/lauter tank, which is the main form of brewhouse system for British and American craft beer. Initially, such a mash/lauter tank was designed to adapt to the one-step saccharification method with a single temperature in the UK and the US. That is to directly mix hot water of a certain temperature with malt to obtain the mash of the target temperature you want, and keep it warm for a certain period of time to allow the amylase to fully act and decompose the starch into fermentable sugar. This saccharification method is simple and easy to implement, and is also suitable for brewing ALE beer with some excellent malts in Europe and America. The process of saccharification and filtration is completed in one container without pouring the mash into the lauter tank, which makes the operation simple and easy, and the equipment cost is also low.
But as the advantages of being able to heat up for multi-temperature mashing emerged, equipment manufacturers, at the request of winemakers, began to seek to solve the heating problem on mash/lauter tanks. Therefore, heating and stirring are also two key factors for craft beer mash/lauter tank.

Since the bottom of the lauter tank is blocked by a sieve plate, it becomes almost impossible to design a heating device at the bottom. Therefore, the bottom cannot be provided with a bottom steam heating jacket, nor can it be heated by a direct fire of a burner. Due to the existence of the plowing and discharging device, or the absence of the plowing and discharging device but the need for manual stirring and discharging, the existence of electric heating pipes has become almost impossible. Therefore, the use of steam jacket heating is almost the only option, and it can only be placed on the side wall of the filter tank. There are only side wall jackets and no bottom jacket. One of the main phenomena is that the temperature of the top layer of the material is very high, while the lower layer is very low, and the stratification phenomenon is very serious. Therefore, an excellent stirring device is particularly important. In addition, because there is no jacket at the bottom, the material below the sieve plate cannot be heated, so it is necessary to solve the circulation problem of the bottom material.

There are two main forms of mash tank stirring in mash/lauter tank form:
One is to use a stirring paddle with the function of removing waste, and if necessary, a double-layer paddle can be set. This form of agitator has good mixing and solid-liquid suspension functions, and can ensure that the temperature of each point of the material is basically the same. However, this form of agitator abandons the function of tillage, and its weakness will appear when tillage is required.
The second is to use an ordinary plowing and discharging device as agitator. The advantage of this form is that it retains the original plowing and arranging function of the lauter tank, but the stirring effect is not good. After heating to the set temperature, stop heating, and the actual temperature will be greatly changed. soaring. How to combine all aspects of functions and ensure that the material at the bottom of the sieve plate can also be heated evenly is a problem that must be considered when designing a mash/lauter tank with excellent performance.
The bottom of the plowing knife is improved, and multiple arc-shaped small paddle devices are used to make the plowing and rowing device have a stirring function. When the reducer rotates clockwise, the small arc-shaped paddle is kept concentric with the filter tank cylinder to realize tillage. When the reducer rotates counterclockwise, the arc-shaped small paddles are closed for stirring and waste removal. However, the stirring effect of this type of plowing and rowing device is average, and it is necessary to add auxiliary stirring paddles on the upper part of the plowing knife and the upper part of the stirring shaft to bring a good stirring effect.
Whether it is a paddle agitator or an improved plowing device, after a long time of stirring, the fine particles in the mash will fall into the lower part of the sieve plate, which will cause great trouble to the reflux of the subsequent wheat wort. Therefore, in order to solve the problem of stirring and heat transfer and plowing and rowing, it is necessary to find a way to solve the problem that the material at the bottom of the sieve plate is not heated and the fine particles fall into the bottom of the sieve plate.
