The characteristics of fermentation technology of craft beer brewed by brewery equipment.

1. Different fermentation processes

 

The fermentation process of craft beer and industrial beer is also different. Generally, craft beer uses the Ale process (Ale), and industrial beer uses the Lager process (Lager). The main difference between the two is the yeast and the fermentation temperature. . as the picture shows:

 

(1) Craft beer: mostly Ayr process, yeast works at the top of fermentation tank, floats above the liquor, and the fermentation temperature is generally controlled at 10-20 ℃. Fermentation tanks are usually small, and filtration and sterilization are not performed after fermentation.

 

(2) Industrial beer: mostly Lager process, yeast works at the bottom of the fermentation tank, sinks under the liquor, and the fermentation temperature is generally controlled below 10 ℃. Fermentation tanks are large. Filtration and pasteurization are usually used after fermentation to increase the shelf life (shelf life) of beer.

 

2. Different fermentation time

 

Besides the difference in fermentation process between craft beer and industrial beer, the fermentation time is also very different.

 

(1) Craft beer: Because it does not require too much cost, the fermentation time is often not paid special attention, and the cost of time is not considered too much. The fermentation time of the most traditional craft beer can be as long as 2 months, so that the beer is fully fermented, the wort concentration is higher, and the flavor is more intense.

 

(3) Industrial beer: For industrial beer, time is money, so the fermentation time of industrial beer is usually only about 7 days, so the fermentation is not particularly sufficient, resulting in low wort concentration and lighter flavor.
